I don’t know about you, but I HATE cooking rice on the stove top. It always seems to boil over the pot and makes a mess then you have to wait for the rice to cook. That all changed after I got my electric pressure cooker (Instant Pot). Rice is one of the many great to cook in this baby and it takes no time!

Rice by itself is bland and boring, so it needs some real flavor boosters. For starters, I like to cook my rice in chicken stock instead of water. The stock provides so much flavor to the rice. I also like to throw in a few sprigs of thyme which gives the rice a nice aroma of the herb.




Pressure Cooker Rice
Ingredients
- 1 cup white rice
- 1 cup chicken stock
- 1 tablespoon unsalted butter
- ½ teaspoon salt
- several sprigs of thyme
Instructions

Add all ingredients to the pressure cooker and set to pressure cook for 4 minutes. Once finished, allow the steam to release naturally for 10 minutes, then quick release the rest. Discard the thyme sprigs.
