Sweet Potato Rice Lettuce Wraps

I was cleaning and organizing my kitchen the other day and I came across my spiralizer that I bought at a Pampered Chef party a few years ago. I had completely forgotten about that thing. It got me thinking about different things I could make. I’m trying to eat better and lay off things like fried foods and so many carbs, so when I was thinking of things that I could spiralize, sweet potatoes came to mind. Sweet potatoes are high in fiber and potassium and they don’t have as many calories as regular potatoes. I figured I could spiralize the potatoes and then chop them to make a “rice”. I wanted to do something with the sweet potato rice instead of just serving it as is, so I thought, what could be healthier than putting them in lettuce and making them into wraps and this recipe was born.

I don’t know why my spiralizer stayed hidden in my cabinet for so long, it’s so versatile with so many things that you can make with it. Zucchini noodles, thinly sliced cucumbers for salads, or even spiralized carrots for stir fry. The possibilities are endless. Spiralizers are fairly inexpensive and they come in all sorts of shapes and sizes. If you really want to get fancy, you can get the attachment for the Kitchen Aid mixer.

Sweet potatoes are bland and boring by themselves, so I had to come up with something to add that would make them pop. I like a lot of spice in my life so I decided to add some sriracha to them. The sriracha gives them that perfect hint of heat without being overpowering. I also wanted to add something to the rice that would give it some texture and the whole kernel corn was the perfect thing.

The first time I made these I used regular ice burg lettuce and when I attempted to make the wraps it was a disaster. The lettuce would rip apart when I peeled it off the head. I then tried bibb lettuce and it worked perfectly. Bibb lettuce has large thick leaves that are loose on the head making them easy to peel off.

These are so simple to make and can be used as an appetizer, side dish, or healthy snack. Also, if you’re trying to eat healthier I would definitely recommend buying a spiralizer and get creative with it. Enjoy!

Sweet Potato Rice Lettuce Wraps

Ingredients

  • 2 sweet potatoes peeled, spiralized, and roughly chopped
  • Olive oil
  • 1 can whole kernel corn drained
  • 1 tablespoon garlic powder
  • 2 tablespoons siracha
  • ¼ cup red onion diced
  • 1 bell pepper diced
  • 1 Roma tomato diced
  • 1 head of bibb or butterhead lettuce
  • Fresh cilantro roughly chopped
  • Fresh squeezed lime juice

Instructions

  1. Heat 2 tablespoons of olive oil in a large sauté pan or wok over medium-high heat. Add sweet potatoes, corn, garlic powder, and cook for 5 minutes or until the sweet potatoes are tender. Stir in siracha, remove from heat, and set aside to cool.
  2. Once the sweet potato mixture has cooled a bit, fold in the onions, bell pepper, and tomatoes. Spoon mixture into each lettuce leaf and top with cilantro and sprinkle of lime juice.
