Olive oil
1can whole kernel corndrained
1tablespoongarlic powder
2tablespoonssiracha
¼cupred oniondiced
1bell pepperdiced
1Roma tomatodiced
1head of bibb or butterhead lettuce
Fresh cilantroroughly chopped
Fresh squeezed lime juice
Instructions
Heat 2 tablespoons of olive oil in a large sauté pan or wok over medium-high heat. Add sweet potatoes, corn, garlic powder, and cook for 5 minutes or until the sweet potatoes are tender. Stir in siracha, remove from heat, and set aside to cool.
Once the sweet potato mixture has cooled a bit, fold in the onions, bell pepper, and tomatoes. Spoon mixture into each lettuce leaf and top with cilantro and sprinkle of lime juice.
