Everyone loves funfetti cake! This soft buttery cake is packed with delicious vanilla flavor and topped off with a rich and decadent buttercream frosting. This cake isn’t just for kids, adults love it too (probable more so than kids!). Funfetti cake is perfect for birthdays, family celebrations, or just any ol’ time!

Cake flour is perfect for making cakes because it has a less protein which produces less gluten which gives you a softer cake.
The eggs being at room temperature help them mix more evenly with the batter.
Allow the cake layers to cool completely before icing.

Funfetti Cake

Ingredients

  • 3 cups cake flour
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter room temperature
  • 1 ½ cups sugar divided
  • 4 eggs separated room temperature
  • 1 tablespoon vanilla extract
  • 1 ½ cups buttermilk
  • ½ cup rainbow sprinkles

Frosting:

  • 1 ¼ cup unsalted butter room temperature
  • 5 cups confectioner’s sugar
  • 2 teaspoons vanilla extract
  • ¼ cup heavy cream
  • ½ cup rainbow sprinkles

Instructions

  1. Preheat the oven to 350 degrees. Grease and line 3 9-inch cake pans with parchment paper.
  2. Sift together the cake flour, baking powder, baking soda, and salt over a large bowl and set aside.
  3. In the bowl of a stand mixer fitted with the paddle attachment, beat the butter until smooth. Add 1 ¼ cup of the sugar and beat until smooth and creamy, about 3-5 minutes. Add the egg yolks one at a time until combined. Add the vanilla extract until combined. With the mixer on low, slowly add the flour mixture and buttermilk a little at a time starting and ending with the flour mixture.
  4. In a separate bowl, beat the egg whites and ¼ cup sugar until soft peaks form, about 3 minutes. Gently fold in the egg whites and rainbow sprinkles until combined. Evenly pour the batter into the 3 cake pans.
  5. Bake for 30-35 minutes until a toothpick comes out clean. When done, remove the cake pans from the oven and let sit for 15 minutes. Turn the cakes out on a cooling rack and let cool completely before icing.
  6. For the frosting, beat the butter until smooth. Add the confectioner’s sugar, vanilla extract, and heavy cream and beat until creamy, about 1 minute.
